Prepare the filling ingredients first. Finely chop the spinach, peel the tomato and remove the seeds, and cut it into cubes. Grate the panela cheese and remove the seeds from the jalapeño.
Preheat the oven to 180°C. Line the baking sheet with aluminum foil.
Heat the nopal tortillas over very low heat on a griddle so they don't break when folded into tacos.
Mix the filling ingredients in a bowl. Divide the mixture among the four tortillas. Fold and secure the tacos with a toothpick.
Place the tacos on the baking sheet and bake for approximately 15 minutes.
