Soak the porcini mushrooms in warm water for 30 minutes until the water becomes a fragrant brown broth.
Sauté the onion, garlic, shallot, and spices. Add a bit of vegetable broth to the pan.
Add the portobello mushrooms until cooked. Add the porcini mushrooms along with the water.
Add the remaining broth until it boils. Once it starts to boil, reduce the heat and let it cook for 15 minutes.
Strain the mixture over a bowl. Return the strained mixture to the pan until it boils.
In another container, dissolve the flour with ¼ cup of water. Once dissolved, add to the gravy to reduce and thicken. Add salt and pepper to taste.
