Vegan Paella with Cauliflower and Broccoli Bits

  • In a paella pan, heat the oil over medium heat, add the tofu cubes, onion, red bell pepper, and cook for 5 minutes, then add the zucchini and cook for 2 more minutes.
  • Add the Cauliflower Bits and Broccoli Bits Eva®, cook for a few minutes, and add the wine. Cook for 15 minutes on low heat.
  • Add the peas, black olives, sun-dried tomatoes, and artichoke hearts, cook for 5 more minutes on low heat.
  • Garnish with parsley and yellow lemon.
