Vegetarian Patacón.

The patacón is a dish made from fried flattened pieces of green plantain. It is a popular dish in several Latin American and Caribbean countries for being practical and easy to prepare. Ideal for us vegetable lovers and those seeking new flavors. Low in calories and very healthy.

  • 1 banana, green
  • 1 zucchini , in julienne
  • 250 grams spinach, chopped and boiled
  • chives, to taste
  • ricotta cheeses, to taste
  • corn kernels, yellow
  • olive oil
  • vegetable oil
  • salt , and pepper to taste
  • Parmesan cheese

  • To make the plantains (tostones): Heat the oil to its maximum point. Peel and cut the plantain in half, resulting in 2 slices from each half. Fry on both sides for 1 minute. On a board, flatten until you reach the desired thickness; I prefer them as thin as possible. Return to the oil until well toasted.
  • Place the zucchini, scallions, spinach, and corn along with the ricotta in a bowl. Add olive oil, salt, and pepper to taste. Stir until all the ingredients are combined.
  • Serve the plantains topped with our vegetarian preparation. Add Parmesan cheese to taste.
