Vegetarian “Shepherd’s Pie”

This delicious recipe is the vegetarian version of shepherd’s pie, where meat is replaced by lentils.   • 1 cup lentils, green or brown
  • 2 leaves bay
  • 1 cup carrot
  • 1 cup celery
  • 3 cloves garlic
  • 1 cup leek
  • 1 teaspoon parsley
  • 1 cup peas, frozen
  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 kilo yukon gold potato
  • 1/2 cups soy milk, or almond, unsweetened
  • 3 tablespoons tomato purée
  • 4 cups vegetable broth
  • 1 tablespoon salt
  • 1 tablespoon olive oil
  • 1/4 cups margarine, or coconut oil

  • Preheat the oven to 120°C.
  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion, carrots, celery, a pinch of salt, and pepper to taste. Cook for 10 minutes until the vegetables are tender.
  • Add the finely chopped garlic, lentils, vegetable broth, and herbs. Bring to a boil. Lower the temperature and cook for about 30 minutes, stirring every 5 minutes, making sure the vegetables don’t stick to the bottom. If necessary, add more water. Once cooked, add the tomato puree.
  • In a pot, place the potatoes with water and a little salt. Cover well and let cook for about 15 minutes.
  • Remove the potatoes from heat and drain the water. Mash the potatoes while they are still hot and return to the pot, add the milk and margarine or coconut oil. Add a little salt and pepper to taste. Remove the herbs from the pot with lentils and add the peas.
  • Place the lentils in a Pyrex or baking dish. Cover with the mashed potatoes in an even layer.
  • Bake for about 10 minutes until the mashed potatoes are golden and crispy. Remove from the oven and serve hot.
