Wash the bananas very well using a brush to remove as many stains as possible from the peel.
Remove the ends and extract the peel from each one. Place the peels in a pot of boiling water until they soften.
In a bowl, grate the green bananas without the peel, add salt to taste to the grated mixture, and set aside for later use in the recipe. In another bowl, grate the onion and garlic (you can also crush them). Additionally, finely chop the bell pepper, green onion, and tomato.
Once you have the soft banana peels, shred them as if they were meat. You can do this with a fork, but it's very easy with your hands.
Place a large skillet over medium heat, add the butter, and sauté the grated onion and garlic until they become translucent without burning. Add the rest of the ingredients, except for the shredded bananas. Let it cook for about 30 minutes until all the flavors blend together.
To finish, in another skillet with plenty of oil for frying, take the shredded bananas and form small patties or croquettes with your hands, pressing with the center of your palm. Fry until golden brown on both sides.
