Whole Wheat Ceviche

  • 1/2 kilos wheat, cooked whole wheat
  • carrots
  • red tomatoes
  • fresh cilantro
  • onions
  • bell pepper
  • 8 limes
  • salt

  • Cooked whole wheat takes about 30 minutes or until it turns a light brown pearlescent color (you will need to soak it overnight before the day you want to make it).
  • Juice about 8 limes (you can use more or less depending on your preference).
  • Chop the onion and pour it into a bowl with the lime juice and let it rest while you process the rest of the ingredients.
  • Chop the tomato, cilantro, and grate the pepper and carrot.
  • Combine the wheat with the rest of the ingredients in the bowl with the onion and lime. Adjust salt to taste.
