Cooked whole wheat takes about 30 minutes or until it turns a light brown pearlescent color (you will need to soak it overnight before the day you want to make it).
Juice about 8 limes (you can use more or less depending on your preference).
Chop the onion and pour it into a bowl with the lime juice and let it rest while you process the rest of the ingredients.
Chop the tomato, cilantro, and grate the pepper and carrot.
Combine the wheat with the rest of the ingredients in the bowl with the onion and lime.
Adjust salt to taste.
