  • 1/4 teaspoons dry yeast
  • 1 teaspoon iodized salt Great Value®
  • 3/4 cups water, warm
  • 2 tablespoons Extra Special Olive Oil®
  • 4 tomatoes, roasted and skinless
  • 1 garlic
  • 4 tablespoons Extra Special Olive Oil®
  • 1 teaspoon oregano
  • 1 teaspoon Great Value® salt
  • 1/2 teaspoons pepper
  • 1 zucchini , in medium slices
  • 1 eggplant, in medium slices
  • 2 tomatoes, in medium slices
  • salt and pepper
  • 1/2 cups Manchego cheese, light, shredded
  • 10 leaves basil, for garnish

  • Preheat the oven to 180° C.
  • In a bowl, mix the flour with the yeast, salt, water, and olive oil. Knead until fully combined and obtain a homogeneous dough. Let it rest in a lightly greased bowl, covered for 30 minutes.
  • For the sauce, blend the tomatoes with the garlic, olive oil, and oregano; season with salt and pepper. Set aside.
  • On a floured surface, roll out the dough and place it on a baking tray. Add the sauce and layer the vegetables, seasoning each one.
  • Sprinkle the Manchego cheese and bake for 20 minutes or until the dough is cooked. Garnish with basil. Buy HERE
