Zucchini with Corn

A very Mexican, delicious, and healthy recipe for zucchini with corn, served as a side dish or salad, it can also be used as a starter, and you can accompany it with a bit of cream or cheese bits.

  • 1 ear corn, shucked
  • 1 tomato, large
  • 2 zucchinis

  • Chop garlic, onion, and tomato. Cut the zucchini into cubes.
  • In a drop of oil, sauté the onion and garlic, add the tomato, zucchini, and corn, cover and simmer for about 5 minutes.
