Rainbow Sushi

Load this rainbow sushi with lots of vibrant colors and take your little one’s party to bold heights! Colorful sushi rolls stuffed with delish cucumber, mango, cream cheese, and avocado make this the perfect meal for your child’s special day!

  • 2 cups sushi rice, cooked
  • 1 tablespoon yellow food coloring
  • 1 tablespoon red food coloring
  • 1 tablespoon green food coloring
  • 1 tablespoon blue food coloring
  • 3 leaves nori
  • 1/2 avocados, sliced
  • 1/2 cups mango, thinly sliced
  • 1/2 cucumbers, cut into thin strips
  • 1/2 cups cream cheese, cut into thin strips

  • In 4 different bowls, dissolve each food coloring with 4 tablespoons of water. Set aside.
  • Divide cooked rice into 4 portions. Place each rice portion into 4 different round baking dishes. Add 2 tablespoons of a different food coloring to each baking dish. Mix and set aside.
  • On a bamboo sushi rolling mat, place nori. In a bowl, add water and wet your hands. Place a row of yellow rice, a row of red rice, a row of blue rice, and a row of green rice lengthwise. Press rice gently to flatten it evenly as shown in the video.
  • Top first two colorful rice rows with cucumber, cheese, avocado, and mango.
  • Roll sushi mat pressing gently. Use a wet knife for cutting rainbow sushi rolls more easily. Cut rainbow sushi in half. Cut sushi roll halves into halves and repeat. Serve rainbow sushi on a plate with soy sauce and paired with iced tea.
