Baked Cauliflower with Asadero Cheese Crust

  • 1 cauliflower, cut into florets or small bushes
  • 2 cups Greek yogurt, natural
  • 300 grams asadero cheese, in slices
  • 1 head garlic, whole
  • 1/4 cups olive oil
  • 1 tablespoon coarse salt, for roasting the garlic
  • 2 tablespoons white vinegar, for cooking the cauliflower
  • 2 teaspoons ground pepper
  • 2 tablespoons salt
  • 6 cups water, for cooking the cauliflower

  • Bring water with salt and vinegar to a boil where you will cook the cauliflower for 20 minutes, then remove and cool in water.
  • Cut the cauliflower into florets or small bushes before cooking.
  • Wrap the whole garlic with olive oil, coarse salt, and pepper in aluminum foil, place in the oven at 200° and cook for about 30 minutes.
  • Remove the garlic from the oven, cut the tip, and extract the puree to mix with the yoghurt.
  • Place the cauliflower in a baking dish and cover with the yoghurt mixture, top with slices of asadero cheese and bake in the oven for 20 minutes at 200°
