  • 1/4 cups butter, melted
  • salt and pepper
  • garlic powder
  • 4 potatoes
  • 1/2 cups bacon, in small cubes
  • 1/4 cups green onion, finely chopped
  • 1/4 cups green onion stalks, thinly sliced
  • 2 cups canned mushrooms
  • 1/4 cups sour cream
  • 1/4 cups Manchego cheese, grated

  • Brush aluminum foil with melted butter and sprinkle with salt, pepper, and garlic powder. Place a potato in the center and wrap it. Repeat this process with all the potatoes and bake at 180 °C for 40 minutes.
  • Fry the bacon for 3 minutes, add the onion, green onion stalk, and mushrooms, and cook for 5 minutes. Incorporate the cream and cheese and cook for 2 more minutes.
  • Cut the potatoes in half, open them slightly, and add some of the filling made of mushrooms, cheese, and more mushrooms. Bake for 5 more minutes.
