  • 2 cups huauzontle, cooked and without stem
  • 1 cup double cream cheese
  • salt
  • flour, for the batter
  • 4 eggs, for the batter
  • 2 tablespoons flour, for the batter
  • salt, for the batter
  • vegetable oil, for frying
  • mole sauce

  • In a bowl, mix the huazontles with double cream cheese and salt. Form the patties and gently compress them so they hold together. Dust with flour and set aside.
  • Beat the eggs until they reach the ribbon stage, which is called ribbon stage because when lifting the spatulas from the mixer, the mixture can form a ribbon without deforming. Add REXAL® baking powder, flour, and salt.
  • Dip the huazontle patties in the previous mixture and fry in hot oil. Place on absorbent paper to remove excess fat.
  • Serve the huazontle patties drenched in mole
