Bean and Cheese Soaked Quesadillas

If you are a fan of fried quesadillas, here’s a new version: bean and cheese soaked quesadillas. With a spicy red sauce, filled with refried beans and bacon, and lots of cheese. Easy, economical, and delicious.

  • 4 tomatoes, for the red sauce
  • 2 serrano chiles, for the red sauce
  • 1/2 white onions, for the red sauce
  • 1 clove garlic, for the red sauce
  • 1/4 cups chicken broth, for the red sauce
  • 1 teaspoon vegetable oil
  • salt
  • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 2 cups refried beans, black
  • 1/2 kilos masa dough
  • water, for the dough
  • 1/4 teaspoons salt, for the dough
  • 1 teaspoon baking powder, for the dough
  • 2 cups asadero cheese, in sticks
  • vegetable oil, for frying
  • lettuce, chopped, for decoration
  • sour cream, for decoration
  • queso fresco, crumbled, for decoration
  • red onion, in rings, for decoration

  • For the red sauce, blend the tomato with the serrano chili, onion, garlic, and chicken broth. Fry in a pot over medium heat with the oil and cook for about 30 minutes or until thickened. Season with salt to taste.
  • In a pan over medium heat, cook the bacon until golden brown, add the onion and refried beans, cook for 10 minutes and season.
  • In a bowl, knead the corn dough with water, season with salt and add the baking powder.
  • Form tortillas with the help of a tortilla press, or between two wooden boards, fill them with beans and asadero cheese, fold into a quesadilla and fry for 5 minutes or until golden brown in hot oil. Drain on paper towels.
  • Serve the quesadillas on a deep plate and cover with the sauce, decorate with lettuce, cream, cheese, and rings of red onion.
