Bean Bomb

Nothing is tastier than the most traditional recipes from each State, which is why we prepared this Bean Bomb recipe, a typical dish from the State of Veracruz. The special thing about this dish is that it is ideally served for breakfast. This recipe features cheese and beans as the main ingredients, with a delicious sweet shell, a combination you would never imagine. When preparing the beans for this Bean Bomb recipe, make sure they are not too liquid, otherwise the bread will soak up too quickly.

  • 1 cup chorizo
  • 1/2 cups onion, finely chopped
  • 2 cups black beans
  • 2 tablespoons ground chipotle chile
  • salt and pepper
  • 6 concha, medium
  • butter
  • 6 slices Manchego cheese
  • pickled chiles, to accompany

  • Preheat the oven to 180°C.
  • Cook the chorizo in a skillet over medium heat until it releases its fat. Add the onion, cook for one minute, incorporate the beans, and using a potato masher, mash to break them apart. Add the chipotle pepper, season with salt and pepper. Remove and set aside.
  • Using a serrated knife, cut the sweet shells in half. Place the bases in an oven-safe dish. Spread with butter and bake for 3 minutes. Remove.
  • Spread the beans on the bases with butter, add the cheese, and place the tops of the sweet shells on top. Bake for 5 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and serve with pickled chiles and a traditional coffee.
