Broad Bean and Spinach Pancakes

  • 1/4 kilos fava beans
  • 2 cups spinach
  • 1 egg
  • 1/2 cups breadcrumbs
  • 1 teaspoon lime juice
  • 1/2 cups vegetable oil

  • Boil the broad beans until soft, add salt (you can use a pressure cooker to make it faster)
  • Once cooked, mash them perfectly.
  • Mix the broad beans with finely chopped spinach, add the egg, breadcrumbs, and lemon drops.

  • Once hot, add the pancakes until golden brown.
