Cachapas are a typical dish from Venezuela, easy to prepare, and the flavor of corn and cheese will win you over. Make them at home; you will surely love them.
Place the corn, harina pan, and salt in the blender; put on the lid. Press the pulse button a few times to chop the corn. Remove the corn mixture from the blender; form 8 pancakes of equal size (3 inches).
Heat the oil over medium heat in a large non-stick skillet. Add the pancakes; cover them. Cook, carefully pressing them down with a spatula after flipping, for 5 minutes on each side or until both sides are golden brown.
Add cheese on top; cover them. Remove the skillet from the heat. Let them rest for 3 minutes or until the cheese melts. Serve hot.
