Chayote Gratin with Bacon

  • 1 liter water
  • 8 chayotes, sliced into 2 cm pieces

  • 2 cups sour cream

  • 1 cup bacon, fried
  • 15 slices deli ham, or turkey breast
  • 2 cups Mozzarella cheese, grated
  • 1 cup Manchego cheese, grated
  • 5 slices bacon, fried, for garnish

  • Preheat the oven to 200°C
  • Heat the water in a pot until it boils and cook the chayote with a bit of salt until slightly softened. Drain and set aside.
  • In an oven-safe dish, place a layer of chayote, cover with a bit of cream, add lemon pepper seasoning, sprinkle with fried bacon, arrange the slices of ham, mozzarella cheese, and Manchego cheese.
  • Repeat the process until the mold is filled and you have several layers. Finish with cheese and sliced bacon on top. Bake for 15 minutes or until the chayote is tender and the cheese has melted. Serve hot and enjoy.
