  • 4 potatoes, peeled, in pieces
  • 1/2 cups bacon, fried, finely chopped
  • 1 tablespoon chives
  • 1 tablespoon oregano
  • 1/4 cups Parmesan cheese, grated
  • 1 tablespoon cow's milk
  • salt

  • 1 cup Mozzarella cheese, in medium squares
  • flour, for breading
  • egg, beaten, for breading
  • breadcrumbs, for breading
  • vegetable oil, for frying

  • Cook the potatoes in a pot with boiling water and salt until soft. Drain and cool.
  • In a bowl, mash the cooked potatoes with a fork until you get a puree. Mix with the fried bacon, green onions, oregano, parmesan cheese, milk, salt, and pepper.
  • Form croquettes using your hands, inserting a cube of mozzarella cheese in the center.
  • Bread the croquettes by passing them through flour, egg, and breadcrumbs. Fry in hot oil until golden and drain on paper towels to remove excess grease.
