Cheese Entomatadas

  • vegetable oil , for the sauce
  • 4 tomatoes, for the sauce
  • 1 serrano chile, for the sauce
  • 1/4 onions, for the sauce
  • 1 garlic clove , for the sauce
  • 1 cup chicken broth , for the sauce
  • vegetable oil , for frying the tortillas
  • salt
  • 12 corn tortillas
  • panela cheese , grated
  • sour cream
  • cilantro, finely chopped, for decoration
  • red onion, for decoration

  • Sauté the tomato, garlic, onion, and chili in a pan with oil for 2 minutes. Pour in the chicken broth and cook for 3 more minutes. Set aside.
  • Blend the ingredients and sauté in a pan with a little oil for 5 minutes. Set aside.
  • Fry the tortillas, dip them in the sauce, and place them on the plate to fill with panela cheese.
  • Decorate the entomatadas with cream, purple onion, and cilantro.
