  • 6 zucchinis
  • 1 cup deli ham, in cubes
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups corn kernel
  • 1 cup panela cheese , in cubes
  • 1 cup pumpkin stuffing
  • salt and pepper
  • 1 cup evaporated milk, for the sauce
  • 1 cup cream cheese, for the sauce
  • 1/4 cups chipotle chile, for the sauce
  • salt and pepper , for the sauce
  • Manchego cheese, in slices, for gratin

  • Cut the top of the zucchini and hollow it out with a spoon. Reserve the filling.
  • For the filling: sauté the garlic and onion, add the bacon until crispy, and add the zucchini filling, corn kernels, panela cheese, salt, and pepper. Cook for 5 minutes, fill the zucchinis, and reserve.
  • Blend the evaporated milk, cream cheese, chipotle, salt, and pepper. Reserve.
  • Pour the sauce in a baking dish, arrange the zucchinis, and cover them with Manchego cheese. Bake for 20 minutes.
  • Serve and accompany with rice and salad.
