  • 6 tomatoes, quartered, for the sauce
  • 1 tablespoon oregano, for the sauce
  • 1 tablespoon cumin, for the sauce
  • 1 tablespoon pepper, for the sauce
  • 6 guajillo chiles, deveined and seedless, for the sauce
  • 1 cup chicken broth, for the sauce
  • 20 slices bacon
  • 4 chicken cutlets
  • 8 slices deli ham, from turkey breast
  • 200 grams asadero cheese

  • Preheat the oven to 180° C.
  • For the sauce, in a deep skillet, heat the oil over medium heat and cook the onion and garlic until they are translucent. Add the tomato, cumin, pepper, oregano, guajillo chili, and cook until the ingredients break down.
  • Fill with chicken broth, bring to a boil, and cook until reduced by half. Remove, let cool slightly, and blend until smooth. Strain if necessary.
  • On a board lined with aluminum foil, arrange the bacon, place a chicken cutlet on top, season with salt and pepper, and cover with ham and cheese. Roll tightly with the foil to ensure a perfect roll. Repeat with the remaining cutlets.
  • Place the rolls on a baking tray and bake for 15 minutes. Remove the aluminum foil and bake again until the bacon is golden brown, about 10 more minutes. Serve with the guajillo sauce and garnish with parsley.
