Chicken and Vegetable Bowl

  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/4 cups basil, finely chopped
  • salt

  • 4 chicken breasts, skinless and boneless
  • 1/2 cups white wine
  • 1/2 cups chicken broth
  • 2 cups Constellation®
  • 2 cups button mushrooms, in halves
  • water
  • salt
  • 2 cups gnocchi
  • basil

  • In a bowl, combine olive oil, cumin, garlic powder, basil, salt, and pepper. Add the chicken and coat with the mixture. Let it rest in the refrigerator for 1 hour.
  • Cut the Constellation® in half and set aside.
  • Cook the chicken in a skillet for 5 minutes on each side. When slightly browned, pour in the white wine, chicken broth, Constellation®, and mushrooms. Cover and cook for another 10 minutes or until everything is well cooked. Set aside.
  • For the gnocchi: cook the gnocchi in a pot of boiling salted water for 4 minutes. Drain and set aside.
  • Serve the chicken in strips, Constellation®, mushrooms, and gnocchi in a bowl. Garnish with fresh basil.
