Chicken Gratin

  • 1/2 cups turkey bacon, sliced
  • 1 tablespoon butter
  • 2 cups chicken breast, in cubes
  • salt
  • pepper
  • 1 tablespoon oregano
  • 1 tablespoon garlic powder
  • 3 cups spinach
  • 1 cup sour cream
  • 1/2 cups Parmesan cheese
  • 1/2 cups Mozzarella cheese, low-fat, grated
  • salad, to accompany

  • Place kitchen towels on a flat plate, then the sliced bacon and another towel on top. Heat in the microwave in 1-minute intervals until crispy. Tear into pieces with your hands and set aside.
  • Add the butter, chicken, salt, pepper, oregano, and garlic in a skillet. Cook for 6 minutes, then add the spinach, cream, and Parmesan cheese and cook for 3 more minutes. Set aside.
  • Place the mixture in a baking dish, add the low-fat mozzarella cheese, and bake in an electric oven at 180 °C for 4 minutes or until the cheese melts.
  • Add the chopped bacon and serve the chicken gratin with a salad.
