Chicken in Guajillo Mole

Ideal recipe to surprise the family with something different and delicious. This chicken stew is bathed in a rich mole made from guajillo chili and decorated with almonds. A dish with the homemade Mexican flavor that you'll want to try as soon as possible.

  • Fry the chiles along with the almonds in a little hot lard, stirring to prevent burning.
  • Roast the tomatoes in the same pot, being careful not to burn them.
  • Remove from heat and blend this with the hot broth, thyme, garlic, and onion. Ensure it is well blended (strain if necessary).
  • Heat a little lard, fry the sauce, stir and let it thicken. Season with salt and pepper and remove from heat.
  • Grill the chicken breasts with salt and pepper.
  • Serve the chicken and pour the mole over it.
