Chicken Meatballs with Spinach

  • Cut the Hydroponic Baby Spinach Eva® into strips, then place in a bowl and add the ground chicken breast, onion, almond, mint, garlic powder, cornstarch, egg, and enough salt and pepper. Mix very well until completely integrated.
  • Take a portion of the mixture, form balls the size of a ping-pong ball with your hands, and repeat until the mixture is finished. Refrigerate the chicken meatballs until use.
  • Blend the tomatoes, onion, garlic, and chipotle pepper in adobo.
  • Pour the blended mixture into a hot pot, add the chicken broth and epazote. Cook the sauce for the meatballs over medium heat until the broth begins to have a small bubble, then it will be time to add the chicken meatballs. Cover and cook on low heat for 20 minutes.
  • Serve the chicken meatballs with spinach hot and garnish with mint.
