Chicken Stew Jardinera

  • 2 tablespoons Inés® toasted sesame oil
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups tomato, finely chopped
  • 1/4 cups serrano chile, finely chopped
  • 4 chicken drumsticks, skinless
  • 4 chicken thighs, skinless
  • 2 cups peas, precooked
  • 1 cup carrot, in small cubes
  • 1 cup potato, in small cubes
  • 1 1/2 cups chicken broth
  • salt
  • pepper
  • 2 sprigs thyme
  • parsley, finely chopped, for garnish

  • Heat Inés® toasted sesame oil in a pot over medium heat and cook the onion and garlic for 2 minutes. Then, add the tomato, serrano chili, and cook for 2 more minutes.
  • Add the pieces of chicken to the same pot, then season with salt, pepper, and cook for 5 minutes or until browned. Add the peas, carrot, potato, chicken broth, thyme, and season with salt and pepper. Finally, cover the pot and let the chicken stew jardinera cook for 15 minutes.
  • Serve the chicken stew jardinera and sprinkle with parsley.
