Chicken with Creamy Cheese and Artichoke Filling

  • 1 tablespoon Primavera® margarine Special Olive Oils, bar 90 g
  • 1 tablespoon onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 cup spinach
  • 1/2 cups artichoke heart, chopped
  • 1 tablespoon capers
  • salt and pepper
  • 1/2 cups goat cheese
  • 1/2 cups cream cheese
  • 2 chicken breasts, boneless and skinless
  • salt and pepper
  • 1 tablespoon Primavera® margarine Special Olive Oils
  • 2 cups cherry tomato, of colors
  • fresh cilantro, for decoration

  • Preheat the oven to 200°C.
  • For the filling, in a skillet over medium heat, cook the onion and garlic with a tablespoon of Margarina Primavera® Aceites Especiales Oliva, add the spinach, artichoke hearts, and capers. Cook for 5 minutes and season with salt and pepper. Cool.
  • In a bowl, mix the cooled filling with goat cheese and cream cheese, adjust seasoning and set aside.
  • Open the chicken breasts in half, being careful not to tear them. Fill with the previous mixture and close with the help of a wooden toothpick. Season with salt and pepper.
  • Sear the chicken breasts in a skillet over medium heat with 1 tablespoon of Margarina Primavera® Aceites Especiales Oliva.
  • Place the chicken breasts on a baking tray along with the seasoned cherry tomatoes, and bake for about 25 minutes or until fully cooked. Remove the toothpicks and serve immediately, garnishing with the roasted tomatoes and cilantro.
