Stuffed Chicken Breasts with Esquites

  • 2 tablespoons butter, to cook the corn
  • 1 cup onion, finely chopped, to cook the corn
  • 1 tablespoon garlic, finely chopped, to cook the corn
  • 4 cups ear corn, dehusked and precooked
  • 2 cups turkey broth, to cook the corn
  • 1/4 cups epazote, to cook the corn
  • 2 árbol chiles, to cook the corn
  • salt, to cook the corn
  • 1 cup McCormick® Guacamole Flavor Mayonnaise Dressing, to cook the corn
  • 4 chicken breasts, boneless, skinless chicken breasts
  • salt

  • 2 tablespoons butter
  • 1 cup chicken broth
  • Mexican red rice, to accompany

  • Melt the butter in a pot over medium heat. Add the onion, garlic, and cook for 2 minutes. When they slightly change color, add the corn, chicken broth, epazote, árbol chili, and salt, and cook for 5 more minutes. Remove from heat and place in a bowl to cool.
  • When the corn is cool, pour the McCormick® Guacamole flavor mayonnaise dressing into the bowl, mix well, and set aside.
  • Cut the chicken in half, but only lengthwise so it can be stuffed. Add one to two tablespoons of esquites and close with two toothpicks. Repeat the same process with all the chicken breasts.
  • Melt the butter in a skillet over medium heat, add the breasts, and brown on both sides for 5 minutes. Add the chicken broth, cover, and cook over medium heat for 10 minutes. Cook for 2 more minutes.
  • Serve the stuffed breasts on a plate and accompany with red rice.
