Swiss Crepes

Get to work and prepare some delicious Swiss crepes, as you will be surprised by their combination of poblano pepper and melted manchego cheese. This is a recipe full of flavor, making it ideal for any time of day, from lunch to dinner.

  • 5 Poblano chiles, without veins, without seeds, roasted and peeled, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 bunches cilantro, washed, for the sauce
  • 1 cup sour cream, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • salt, for the sauce
  • 1 tablespoon butter, in cubes, for the sauce
  • 2 eggs, for the crepe mixture
  • 2 cups flour, for the crepe mixture
  • 1 1/2 cups milk, for the crepe mixture
  • 1 teaspoon salt, for the crepe mixture
  • 1 tablespoon sugar, for the crepe mixture
  • 1/3 cups butter, melted, for the crepe mixture

  • 2 cups chicken breast, cooked and shredded
  • 2 cups Manchego cheese, grated
  • 1 sprig cilantro, for garnish

  • For the sauce: blend the poblano pepper, onion, garlic, cilantro, sour cream, chicken broth, and enough salt until well integrated. Melt the butter in a pot over medium heat and pour in the sauce. Then, cook the sauce for 10 minutes, stirring constantly until it thickens slightly. Set aside.
  • Prepare the crepe batter! Blend the eggs, flour, milk, salt, sugar, and butter until well combined.
  • Heat a crepe pan or a non-stick skillet to the size you want your crepes. Grease with cooking spray, pour a little of the crepe mixture, and move it until it completely covers the surface of the pan, making it as thin as possible.Cook the crepes over medium-low heat for at least 2 minutes. Flip and cook for another 45 seconds. Repeat until the crepe batter is finished.
  • Fill the crepes with the shredded chicken, folding them in a fan shape. Then, arrange the crepes in a rectangular baking dish, pour the sauce over the crepes, and top with manchego cheese. Bake the Swiss crepes at 180 °C for 10 minutes.
  • Take the Swiss crepes out of the oven, garnish with cilantro leaves, and enjoy. If desired, you can also add onion to serve the savory crepes.
