Chile en nogada croquettes

  • 1/2 cups Rice Flour Three Stars®
  • 2 cups ground beef
  • 2 1/2 Poblano chiles, roasted, peeled, and finely chopped
  • 1/2 cups apple, in small cubes
  • 1/2 cups pear, in small cubes
  • 1/4 cups plantain , fried, in small cubes
  • 2 tablespoons almonds, finely chopped
  • 1/2 teaspoons cinnamon powder
  • salt and pepper
  • Rice Flour Three Stars®
  • 2 eggs
  • breadcrumbs
  • vegetable oil
  • 1/2 cups walnut
  • 1/2 cups cream , for the nogada
  • 3/4 cups cream cheese, for the nogada
  • 1/3 cups sherry , for the nogada
  • 1 tablespoon sugar , for the nogada
  • salt , for the nogada

  • In a bowl, mix Tres Estrellas® Rice Flour with ground beef, poblano peppers, apple, pear, plantain, almonds, ground cinnamon, salt, and pepper. With the help of your hands, form the croquettes and set aside.
  • Pass them through Tres Estrellas® Rice Flour, then through beaten egg, and finally through breadcrumbs.
  • Heat enough oil and fry the croquettes until they are golden and crispy. Drain on absorbent paper.
  • Blend the ingredients for the nogada until you obtain a creamy sauce.
  • Serve the chile en nogada croquettes and garnish with pomegranate and parsley.
