  • 1 kilo tortillas
  • 6 ancho chiles
  • 1/2 kilos queso fresco
  • 3 cloves garlic
  • 1 cinnamon stick
  • 250 grams scallion
  • 110 milliliters vegetable oil
  • 1 tablespoon salt

  • On a griddle, toast the chiles; once sufficiently toasted, remove the seeds and soak them in 2 cups of hot water to soften.
  • In the blender, place the chiles, garlic, cinnamon, and add the water where the chiles were soaked, blend to obtain a sauce.
  • Then, in a skillet with a little oil, fry the sauce, season with a little salt, let it boil for a few minutes, and remove to let it cool.
  • In a skillet, place oil and fry the tortillas without browning them completely. Dip the tortillas in the sauce, fill them with cheese and onion, and fold.
  • Serve on a plate and add more sauce.
