4 Poblano chiles
1/2 cups cilantro, for the filling
1/2 white onions, for the filling
2 cups canned tuna, drained, for the filling
pinches salt, for the filling
pepper, for the filling
1 cup Manchego cheese, grated, for the filling
3 tomatoes, for the sauce
2 chipotle chiles, for the sauce
1/4 onions, for the sauce
1 clove garlic, for the sauce
thyme, for the sauce

Wash and disinfect the vegetables.
Remove the skin and seeds from the poblano peppers, set aside.
Chop the white onion and parsley into small cubes.
In a bowl, mix tuna, white onion, cilantro, salt, and pepper.
Stuff the poblano peppers with the tuna mixture and finish with grated manchego cheese. Bake for 20 to 25 minutes at 180°C until golden.
Blend tomato, white onion, garlic, chipotle pepper, sauté, and add thyme, salt, and pepper. Adjust the seasoning.
Serve the stuffed pepper and top with the tomato sauce. Enjoy.
