Delicious Stuffed Peppers with Tuna

  • 4 Poblano chiles
  • 1/2 cups cilantro, for the filling
  • 1/2 white onions, for the filling
  • 2 cups canned tuna, drained, for the filling
  • pinches salt, for the filling
  • pepper, for the filling
  • 1 cup Manchego cheese, grated, for the filling
  • 3 tomatoes, for the sauce
  • 2 chipotle chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • thyme, for the sauce

  • Wash and disinfect the vegetables.
  • Remove the skin and seeds from the poblano peppers, set aside.
  • Chop the white onion and parsley into small cubes.
  • In a bowl, mix tuna, white onion, cilantro, salt, and pepper.
  • Stuff the poblano peppers with the tuna mixture and finish with grated manchego cheese. Bake for 20 to 25 minutes at 180°C until golden.
  • Blend tomato, white onion, garlic, chipotle pepper, sauté, and add thyme, salt, and pepper. Adjust the seasoning.
  • Serve the stuffed pepper and top with the tomato sauce. Enjoy.
