Delicious Vegan Marinated Mushroom Tacos

On those days when you don't want to eat meat, this vegan mushroom taco recipe will be ideal for preparing a delicious meal. Drenched in a marinade of chiles and Del Fuerte® Chipotle Tomato Purée, the mushrooms turn out very tasty, and you can use any other type of mushrooms you desire. Serve them with fresh cheese, avocado, and radish.

  • In a bowl, soak the chiles in hot water until soft; set aside.
  • Blend the chiles with a little of the liquid they were soaked in, the onion, garlic, vinegar, pepper, cumin, and Del Fuerte® Chipotle Tomato Purée until you obtain a smooth marinade.
  • Heat a pan over medium heat with the oil and cook the onion until shiny, add the epazote, mushrooms, and marinade, cook for 5 more minutes, season to taste with salt and pepper.
  • Heat the tortillas on a griddle over medium heat.
  • Serve the marinated mushrooms on the tortillas, garnish with avocado, quintonil, tomato, fresh cheese, and radish.
