Easy Stuffed Zucchinis

Delicious stuffed zucchinis with vegetables are a very healthy and tasty recipe. They are perfect for Meatless Monday and are quick and easy to prepare.

  • 2 zucchini
  • 1 bell pepper
  • 1/2 onions
  • 1 leek
  • 4 tablespoons tomato sauce
  • cheese, grated

  • Cut the zucchini lengthwise and cook it in salted water for about 7 minutes.
  • In a skillet, prepare the vegetable sauté: bell pepper, onion, leek, and tomato.
  • Once the zucchinis are cooked, drain them and remove the center. Add the zucchini you removed to the sauté.
  • When the sauté is ready, fill the zucchinis, sprinkle grated cheese on top, and broil for a few minutes.
