Delicious stuffed zucchinis with vegetables are a very healthy and tasty recipe. They are perfect for Meatless Monday and are quick and easy to prepare.

Low
Cut the zucchini lengthwise and cook it in salted water for about 7 minutes.
In a skillet, prepare the vegetable sauté: bell pepper, onion, leek, and tomato.
Once the zucchinis are cooked, drain them and remove the center. Add the zucchini you removed to the sauté.
When the sauté is ready, fill the zucchinis, sprinkle grated cheese on top, and broil for a few minutes.
