Egg Cakes with Green Beans

  • 2 cups egg, for the cakes
  • 4 tablespoons flour, for the cakes

  • For the sauce, in a saucepan over medium heat, sauté the onion and garlic with a tablespoon of oil. Add the chilies and tomatoes, continue cooking until soft. Add the chicken broth and let it reduce. Cool slightly.
  • Blend the previous preparation along with the cilantro until you obtain a sauce.
  • In a saucepan over medium heat, fry the sauce with the remaining oil, season with salt and pepper, and cook for 10 minutes.
  • For the cakes, in a bowl, mix the green beans with the panela cheese, eggs, flour, and season with salt and pepper.
  • In a skillet over medium heat, heat the oil, add a large tablespoon of the green bean mixture forming a cake, and cook on both sides until golden. Drain on paper towels.
  • Serve the cakes with the sauce as a mirror and decorate with cherry tomatoes, slices of serrano chili, cilantro, and enjoy.
