These delicious Fried Quesadillas with Zucchini Flowers are a delightful Mexican recipe that is very easy to cook. The filling of zucchini flowers is delicious and healthy, as zucchini flowers provide various nutrients, vitamins, and minerals beneficial for our body.   • For the dough, in a bowl combine corn flour with wheat flour, oil, water, salt, and baking powder. Knead with your hands and add more water if necessary, until a well-integrated dough forms. Set aside.
  • Heat a medium skillet over medium heat with the oil, add the white onion, garlic, zucchini flowers, and epazote, cook for 5 minutes and season to your taste. Cool the filling and set aside.
  • Form tortillas and fill with reduced-fat Oaxaca cheese and the sautéed zucchini flowers, close the tortillas to form the quesadilla. Shape all the quesadillas and set aside.
  • Heat a small pot with vegetable oil, fry the quesadillas until crispy, and remove excess oil with a paper towel.
  • Open the quesadillas and serve with lettuce, low-calorie sour cream, reduced-fat panela cheese, and salsa.
