  • 5 tomatoes
  • 1/4 onions
  • 1 garlic clove
  • 3 guajillo chiles, seedless
  • 1 ancho chile, seedless
  • salt and pepper
  • 1/2 cups chicken broth
  • oil
  • 12 corn tortillas
  • 2 cups chicken, shredded
  • cream
  • panela cheese , grated
  • red onion, sliced
  • cilantro

  • In a pan with a little oil, sauté the tomatoes, onion, garlic, and chilies for 3 minutes or until all ingredients are golden.
  • Blend the ingredients with salt, pepper, and chicken broth. Pour into a pot with a little oil and cook for 5 minutes. Set aside.
  • Fry the tortillas in another pan with oil over medium heat for 2 minutes on each side or until soft. Fill with chicken and roll up.
  • Serve 3 enchiladas on each plate. Top with the sauce and garnish with cream, grated cheese, onion, and cilantro.
