Huauzontle Patties with Mole

  • 2 cups huauzontle, clean and without stems
  • water

  • 1 cup asadero cheese, grated
  • pepper
  • 1 cup mole sauce, in paste
  • 3 cups chicken broth
  • 1 Mexican chocolate tablet, 90 g
  • 4 egg whites
  • 4 egg yolks
  • flour
  • vegetable oil, for frying
  • sesame seeds, for decoration

  • In a small pot with water over medium heat, cook the huauzontles with salt. Drain and set aside.
  • In a bowl, mix the huauzontles with the cheese and season with salt and pepper. Using your hands, form patties from the mixture and set aside.
  • In a small pot over medium heat, dissolve the mole paste with the chicken broth and stir until diluted. Add the chocolate and continue stirring until you have a thick consistency. Adjust seasoning.
  • In a bowl, beat the egg whites with a little salt until you reach the turrón point.
  • Lightly beat the yolks with a little salt, add the yolks to the egg whites and beat until incorporated.
  • Dip the huauzontle patties in the batter and fry in a pan with hot oil for 5 minutes, or until cooked. Place on absorbent paper to remove excess oil.
  • Serve a little mole on a plate, place the patties, drizzle with more mole, and decorate with sesame seeds.
