Huauzontles Stuffed with Oaxaca Cheese and Pasilla Chile Sauce

These huauzontles stuffed with cheese are battered and topped with an exquisite pasilla chile sauce. They have a delicious filling, and the contrast of flavors is simply spectacular.

  • 4 cups water
  • 1 teaspoon salt
  • 4 cups huauzontle, clean
  • 400 grams Lala® Oaxaca cheese
  • 1 cup flour
  • 5 eggs
  • 7 pasilla chiles, deveined and soaked
  • 3 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 1/2 cups vegetable oil
  • 1 tablespoon salt, for the sauce

  • Boil the water together with the salt over medium heat, add the huauzontles, mix, and let cook for 10 minutes. Remove from heat, drain, and let cool.
  • Squeeze the huauzontles well, take a portion, fill with LALA® Oaxaca Cheese, cover perfectly, and compact as much as possible.
  • Dust the patties with flour, removing the excess. Beat the eggs and coat the patties.
  • Heat the oil in a pan over medium heat, fry the patties, remove, and drain the fat on paper towels.
  • Blend the chiles, tomato, onion, and garlic with a bit of water until you have a smooth sauce. Heat a little oil in a medium pot, pour in the sauce, and cook for 10 minutes over medium heat. Season.
  • Serve the sauce and place the huauzontle patties on top.
