These huauzontles stuffed with cheese are battered and topped with an exquisite pasilla chile sauce. They have a delicious filling, and the contrast of flavors is simply spectacular.
Boil the water together with the salt over medium heat, add the huauzontles, mix, and let cook for 10 minutes. Remove from heat, drain, and let cool.
Squeeze the huauzontles well, take a portion, fill with LALA® Oaxaca Cheese, cover perfectly, and compact as much as possible.
Dust the patties with flour, removing the excess. Beat the eggs and coat the patties.
Heat the oil in a pan over medium heat, fry the patties, remove, and drain the fat on paper towels.
Blend the chiles, tomato, onion, and garlic with a bit of water until you have a smooth sauce. Heat a little oil in a medium pot, pour in the sauce, and cook for 10 minutes over medium heat. Season.
Serve the sauce and place the huauzontle patties on top.
