  • 1 turkey, 6 kilos
  • 1 tablespoon salt
  • 1 tablespoon ground pepper
  • 1 onion, in quarters
  • 2 celeries, cut into 4
  • 3 sprigs fresh thyme
  • 3 sprigs sage, fresh
  • 4 tablespoons butter, without salt

  • Preheat the oven to 200 °C.Dry the turkey well inside and out and remove all excess fat.
  • Spray oil in the roasting pan, place the turkey breast side up, and season with salt and pepper.
  • Place the onion, thyme sprigs, and sage sprigs inside the cavity of the turkey. Tie the legs with kitchen twine to keep them together.
  • Finely chop the remaining thyme and sage leaves and place them in a bowl, then add the butter and turkey seasoning. Mix well until you have a paste.Rub the turkey with this mixture under the skin. Set aside the rest for later.
  • Add one cup of turkey broth to the pan.Roast the turkey for one hour, basting with the butter and spice mixture, then lower the temperature to 175 °C.
  • Continue roasting the turkey for 2 and a half hours or until the thermometer indicates an internal temperature of 76 °C.Add more turkey broth if necessary.
  • Remove the turkey from the oven and cover with aluminum foil. Let it rest for 30 minutes.Transfer the turkey to a cutting board.Garnish with fresh sage and thyme.
