  • 2 kilos pork steak, pork leg, for the trompo
  • salt and pepper
  • 2 boxes Doña María® Mole Ready to Serve
  • 2 cups onion, sliced, for the trompo
  • 3/4 kilos bacon, for the trompo
  • 1/2 pineapples
  • corn tortillas, for serving
  • onion, pickled, for serving
  • cilantro, finely chopped

  • Place the pork steaks in a baking dish and season with salt and pepper. Add Doña María® Ready-to-Serve Mole, mix and let marinate for 30 minutes. Keep in the refrigerator.
  • For the trompo: place the pineapple on a tray and add a layer of meat, one of onion, and one of bacon. Repeat the process until you achieve a tower approximately 30 cm high. Place a piece of pineapple on top and insert a metal skewer stick to maintain the shape of the trompo.
  • Bake at 180 °C for 2 hours, turning the trompo a couple of times for even cooking. After the time, raise the oven temperature to 190 °C and turn it again to get an even browning; cook for 10 more minutes.
  • Slice the meat trompo with mole and serve in tortillas. Serve with cilantro, grilled pineapple, and pickled onion.
