  • 3 guajillo chiles, rehydrated and seedless
  • 1 ancho chile, rehydrated and seedless
  • 2 morita chiles, rehydrated and seedless
  • 1/4 cups árbol chile, rehydrated and seedless
  • 3 tomatoes, roasted
  • 1/2 onions, roasted
  • 1 clove garlic, roasted
  • 1 cup water
  • 1 teaspoon cumin
  • 2 cloves
  • 1 teaspoon oregano
  • salt
  • 1 kilo beef shank, in medium pieces
  • salt

  • 2 packages instant ramen noodles
  • onion, finely chopped
  • cilantro, finely chopped
  • lime juice, for garnish

  • Blend the guajillo chile, ancho chile, morita chile, árbol chile, tomatoes, onion, garlic, water, cumin, cloves, oregano, and salt.
  • In a bowl, place the meat, cover with the sauce, and let marinate in the refrigerator for 1 hour.
  • Place the meat in a pressure cooker, pour in the sauce, cover with water, and cook for 50 minutes.
  • Remove the meat and shred it. Return it to the pot, add the ramen, and cook for another 10 minutes.
  • Serve the birriamen, garnish with onion and cilantro, and accompany with lime juice.
