Cold Meat Roll

  • The meats are seasoned with salt and pepper a day before and left in the refrigerator with Maggi sauce and Worcestershire sauce.
  • Take the meats out of the refrigerator. Spread the cloth and arrange the strips of bacon vertically, then lay the beef loin and crumble the chorizo on top.
  • The pork loin is placed on top and rolled up tightly.
  • It is tied and placed in a baking tray.
  • In water, add vinegar, onion, bay leaves, thyme, and chicken broth concentrate.
  • Preheat the oven and bake for 2 hours covered with aluminum foil.
  • Remove it and let it cool, slice it, and drizzle with the vinaigrette.
  • To prepare the vinaigrette, dissolve the egg yolks in a little water and strain them, then add the other ingredients, mixing them very well. If you want, the egg whites can be cooked and chopped.
