  • 1 egg
  • 1/4 onions
  • 1 clove garlic
  • salt

  • 1 kilo ground pork
  • 1/4 cups parsley, finely chopped
  • 400 grams Mozzarella cheese, in medium cubes, for stuffing
  • 3 tomatoes, grilled
  • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 1 serrano chile, grilled
  • salt
  • pepper
  • 1/2 cups nopal, cooked, in strips

  • Blend the egg, onion, garlic, salt, and pepper until you achieve a smooth mixture. Set aside.
  • In a bowl, mix the ground beef, ground pork, parsley, and the egg mixture until all ingredients are combined. Take portions of meat, stuff with cheese cubes, and form balls.Cook in the air fryer at 180 °C for 15 minutes or until well cooked.
  • Place the tomatoes in a molcajete and start grinding. Add the onion, garlic, and chili and continue grinding until you obtain a chunky sauce. Add the nopales and season with salt and pepper.
  • Serve the keto meatballs and drizzle with the chunky sauce.
