Aztec cake with mole recipe

  • 1 Mole Doña María® Ready to Serve
  • 2 tablespoons Great Tradition® Oil
  • corn tortillas
  • 3 cups chicken breast, cooked and shredded
  • 2 cups Manchego cheese, grated
  • 1 cup Manchego cheese, for decoration
  • 1/2 cups sour cream, for decoration
  • 1/4 cups red onion, sliced, for decoration
  • 1/4 cups sesame seeds, toasted, for decoration

  • Add the Doña María® Ready to Serve Mole to a pot over medium heat, mix constantly, and cook for 5 minutes. Remove from heat and set aside.
  • Heat Gran Tradición® Oil in a skillet over medium heat and fry the tortillas for 2 minutes on each side. Remove from heat and remove excess oil with paper towels. Set aside.
  • Grease a baking dish and assemble the Aztec cake: place a base of tortillas, add a layer of chicken, pour the Doña María® Almond Mole Ready to Serve, and decorate with manchego cheese. Repeat the process until finishing with a layer of tortillas.
  • Cover with a layer of manchego cheese and bake for 5 minutes or until the cheese is melted.
  • Cut a piece of the Aztec cake and decorate with cream, red onion, and sesame seeds.
