Aztec Cake with Simple Ingredients

  • vegetable oil
  • 12 tortillas, from the previous day
  • 3 Poblano chiles
  • 6 tomatoes
  • 1 clove garlic
  • 1/2 cups water

  • 1 cup corn kernels
  • 4 cups chicken, cooked and shredded

  • Heat the vegetable oil and briefly fry the tortillas on both sides without deep-frying. Set aside.
  • Roast the chiles on both sides and place them in a plastic bag to peel.
  • For the tomato sauce, blend the tomatoes with the garlic, water, and salt for 3 minutes. In a skillet, sauté the onion, strips of poblano pepper, corn, and chicken; add the tomato sauce and cook for 10 minutes.
  • To assemble the cake, place a layer of tortilla, a layer of chicken, cream, and cheese; repeat the process until the container is full, finishing with a layer of cheese. Bake for 15 minutes.
  • Cut a slice and serve with your preferred drink.
