  • 3 plantains, for the filling
  • 1/4 cups cotija cheese , for the filling
  • salt , for the filling
  • pepper , for the filling
  • vegetable oil
  • corn tortillas, for the mole
  • 2 guajillo chiles, rehydrated, for the mole
  • 2 ancho chiles, rehydrated, for the mole
  • 1/3 onions, grilled, for the mole
  • 1 cup red mole paste, for the mole
  • 2 cups chicken broth , for the mole
  • 1 Mexican chocolate tablet, for the mole
  • salt
  • sour cream , to accompany
  • queso fresco, to accompany
  • red onion, to accompany
  • plantain , fried, sliced, for garnish
  • 1 Sidral Mundet® Apple flavor

  • Cut the plantains in half with the skin on and cook in a pot with water for 15 minutes. Remove the skin and set aside.
  • In a bowl, mash the plantains, add the Cotija cheese, and mix until combined. Season with salt and pepper. Set aside.
  • Heat the oil in a skillet over medium heat and fry the tortillas for 5 seconds on both sides. Place on absorbent paper and set aside.
  • Blend the guajillo chili, ancho chili, onion, chicken broth, and mole paste for 3 minutes until achieving a homogeneous consistency. Set aside.
  • Heat a little oil in a semi-deep saucepan, add the mole, and cook over low heat; if necessary, pour in more chicken broth. Add a tablet of table chocolate and cook for 15 more minutes.
  • Fill a tortilla with the plantain, place it on a plate, cover with mole, and garnish with cream, cheese, red onion, and slices of fried plantain. Enjoy with a refreshing Sidral Mundet® Apple flavor!
