Barbecue Flautas in Macha Sauce

  • 3 cloves garlic, for the sauce
  • 1/2 cups morita chile, without tail, for the sauce
  • 1/2 cups árbol chile, without tail, for the sauce
  • 1/2 cups cascabel chile, without tail, for the sauce
  • 1/2 cups chipotle chile, without tail, for the sauce
  • 2 tablespoons sugar, for the sauce
  • sea ​​salt, for the sauce
  • sour cream, for decoration
  • Romaine lettuce, in thin strips, for decoration
  • queso fresco, grated, for decoration

  • Place the pieces of meat inside the cactus leaf, sprinkle with salt, pepper, add the avocado leaf, and close the cactus leaf wrapping everything, like a little package. Set aside.
  • Place a rack inside a pressure cooker to cook the meat in a water bath. Add the onion and garlic, then pour water until it covers the rack. Next, place the stuffed cactus leaf with the meat, cover, and cook for 90 minutes.
  • Remove the meat and shred it on a board with two forks. Assemble the flautas: place some meat in the flauta tortillas and close, rolling them tightly. Set aside.
  • Place the barbecue flautas in the air fryer basket and fry at 200 °C for 10 minutes. Set aside.
  • For the sauce: Pour Ines® Spicy Sesame Oil into a pot, heat over medium heat, then add the garlic, morita chili, árbol chili, cascabel chili, chipotle chili, and cook for 5 minutes or until they slightly change color. Remove from heat, strain the oil, and set aside.
  • Blend the chiles with the garlic, sugar, and salt, then place in a bowl with the oil you saved.
  • Serve the barbecue flautas, decorate with cream, lettuce, and cheese, and accompany with the macha sauce.
