Bean and chorizo Aztec pie

  • 2 cups chorizo, shredded
  • 1/2 cups onion
  • 2 cups refried beans
  • 2 cups chicken tinga
  • corn tortillas, fried
  • sour cream
  • Manchego cheese, grated
  • chorizo, fried, for decoration
  • cilantro leaves, for decoration

  • Cook the chorizo in a skillet over medium heat for 5 minutes or until golden. Add the onion and cook for 2 more minutes. Finally, add the beans and cook for 5 minutes. Set aside.
  • Place a layer of tortillas in a baking dish, add a layer of beans, then a layer of chicken tinga, and a layer of cream and cheese. Repeat the same process until the baking dish is full.
  • Bake the Aztec pie at 180 °C for 20 minutes.
  • Serve and garnish with fried chorizo and cilantro leaves.
